A fat bomb is an excellent source of healthy fats and is great option for a low carb macro day, not to mention, they taste like a treat! Reminder, fat does not make us fat. Eating enough healthy fats is critical to maximizing our fat burn!
All you need are a few simple ingredients and a mini-muffin tin. This yields 12- 15 bombs and I'll eat at least 2-3 on low carb days!
Macros: 8.7F, 1.7C, .5P and 84 calories each for 15 servings.
INGREDIENTS
1/2 cup coconut oil solid
2/3 cup raw peanut butter no sugar added- I like Justin's brand.
1 teaspoon ground cinnamon
1/4 teaspoon sea salt
2 teaspoons vanilla extract
1 tablespoon organic blue agave
course sea salt to top (optional)
INSTRUCTIONS
1) Line 12-15 mini muffin tins with paper liners or go without if using a non-stick muffin tin and set aside.
2) In a large, microwave-safe bowl, combine the coconut oil and raw peanut butter. Place in the microwave and heat on high for 30 seconds. Remove, stir and place back in the microwave and repeat until completely melted.
3) Add the cinnamon, sea salt, vanilla and agave and whisk until combined. Evenly distribute the into the prepared muffin tins. Sprinkle with sea salt- optional.
4) Place in the freezer for at least 1 hour. Remove from freezer and pop out the bombs. You can store in the freezer for up to 3 months.
